Our Chef
We've been waiting for the Peruvian food trend to hit Perth, and Luis Vergara, our Cooporate Chef, may start the ball rolling. He may have grown up in South America, but his culinary training was international, to say the least.
"My father was born in Spain and my grandmother in Italy, and they would always cook from scratch" says Luis. "The foundation of my culinary interest and skill was learned from my grandmother and I put 'from scratch' in my everyday cooking."
Luis graduated from the prestigious Le Cordon Bleu (Academie D’Art Cullinaire - Perú) and has been the head chef at White Salt Restaurant at Sorrento Beach and the Public House Kitchen and Bar in the Perth CBD.

We’re a family-owned, wholely West Australian company that provides organic products and gluten free (GF) options to restaurants, cafés, caterers and retail outlets.
It came about through the huge consumer demands for handcrafted organic products. So we created a range of products in variety of South American style recipes, like real potato and sweet potato gnocchi, churros, arancinis, fruit chutneys, sauces and marinades.
We appreciate that modern consumers are looking for something special and unique in their food offerings, which is where we believe The Gusto Co can be of assistance to you.
